Picked after another hot summer on the twenty first of February; a little bigger again than last, minimal intervention, open fermented with the help of the local birds and bees, matured in reworked fine oak French hogsheads.
Plummy with cranberry notes, and tones of its herbaceous variety; drink now, or solid enough to tuck away for distant rainy days, and special lunches. Try it with beef & carrot pie.
